Most full charts have a wide array of several (if not all) signs, so that's no surprise. (The only exception I've currently heard of is Stuart Townsend, who's Scorpio in every facet except Sun sign, which is Sagittarius. Useful for an actor, really.) Basically, where the planets are in other areas of your chart tend to cover other aspects of your personality--the little things not covered by sun/rising/moon signs that you might not notice about yourself.
Of course, Astrology doesn't pretend to be a perfect science; while exact in the math and degree sense, it's like any form of divination: give it about a week, at its strongest, and anything could change. As such, if you find something that doesn't really seem to mesh (like my north node in Gemini meaning I'm big on gossip--yeah, right!), don't be surprised. Without getting a professional-level chart done, there is very likely going to be one or two things that stand out.
