So, I think Charlie absolutely knew what the Cullens were once Jacob "shifted" in front of him and he saw that werewolves were real. He just didn't want to say it out loud* to make it a fact that his daughter was now a vampire.
*side note-I just TOTALLY thought of the movie when Edward says "Say it, out loud" to Bella in the woods!
I LOVE the sound of his voice and the look on his face when he says that!
