As far as amputated limbs being restored during the process, I think that is still unknown, although I personally doubt it.

I can think of a very good reason why every vampire piece should be burned, as the dismembered limbs still show signs of life, and you would want to gather every piece and burn them in order to destroy all evidence. You wouldn’t want a human to stumble across a severed hand crawling around in the forest.
I though it was said that the dismembered vampire limbs `searched` for the rest of the body so it could reassemble itself. Therefore I don't think a dimembered hand could regrow into a new vampire (It would be kind of weird if all vampires could clone themselfs that way  ) That is also the reason why I think amputated limbs don't reform during vampirization. The venom changes existing cells, it doesn't induce growth of new ones. You are frozen in the state you are in, with or without all your limbs. So it would be very inconvienient if you've had an amputation.
Maybe it would be possible to reattach the limb during vampirization if someone would hold the pieces together and the venom could flow into the amputated limb. That way the venom could heal the cut. But then you would have to save your limbs in the hope that someday you would be turned into a vampire and I don't know anyone who would do that ;) . (I feel really weird thinking of warehouses full of saved limbs :? )

Do you think if you were a vampire with a missing limb, that you could rip off another vampire's limb and attatch it to you?

^^ LOL That would be very cool  . "I like the legs on that vampire, let's rip them off and make them my own! Oh, and I like that nose! "
But maybe the limb of vampire1, which is attached to vampire2, would still be searching for the rest of vampire1 and then vampire2 would have a limb that is constantly pulling him in the wrong direction. (If you get what I'm trying to say)

Edit: ^ wow I must have been really hyper that day and my imagination ran wild  But the point was that it could be possible. I can't think of a reason why it couldn't.
